Varieties:
There are two types of papayas: Mexican and Hawaiian. Hawaiian papaya: pear shaped yellow skinned fruit when ripened weighing about one pound. The flesh is bright orange to pinkish, depending on variety, with small black seeds clustered in the center of the fruit. Mexican papaya: is much larger than the Hawaiian fruit often weighing ten pounds. The flesh is yellow, pink or orange.
Selecting the Perfect Papaya:
One must choose a papaya with unblemished skin and vibrant colors. The papaya should feel heavy while at the same time having some give when pressed. If one sees a papaya with dark spots they should select an alternative fruit.

The papaya fruit is high in Vitamin C. The flesh contains very high levels of Vitamin A. Papaya also contains: calcium, iron, niacin, riboflavin and thiamine.
